BFD: Breakfast For Dinner.
It’s one of my all time favorite time and money saving tricks.
Kids love BFD and this Tator Tot Egg Bake from Vicky at Mess for Less is no exception. Well, actually it was a bit of an exception at first as the kids couldn’t remember if they loved or hated egg bake and were leery of the “potato” like topping. After all, they only like tator tots, not potatoes. They hate potatoes.
This casserole is super easy and can be made ahead of time to serve a crowd. It’s just as delicious for supper as it is for breakfast or brunch and is even better reheated.
All four kids (my niece was visiting) ate an ENTIRE serving! It took two hours, some ketchup, and a plate of cookies that they couldn’t touch until after finishing to convince the boys to try it, but once they did, it disappeared quickly. The girls ate right away with no complaints. I don’t want to call this a miracle, but I swear I saw the face of the Virgin Mary appear in ketchup smears on the table afterwards.
~ We subbed about a pound of chopped ham for the sausage, you can try bacon or add sauteed veggies, the recipe is so versatile!
~ I had to increase the baking time to an hour. Check after 45 minutes, the egg should be completely set in the center and the edges should be golden and crisp- yum.
~ For extra flavor I like add a couple of teaspoons of dijon mustard and a teaspoon of garlic powder to the egg and milk mixture.
